Alan Jackson Shares a Sweet Holiday Recipe
Thanksgiving is right around the corner, and for me, that means two of my favorite things: football and food. I'll be spending the holiday at home with my family in Indiana with a huge plate of mashed potatoes, turkey, stuffing and the rest of the traditional dishes. If you're stuck on what to make for the holidays, try a recipe from Alan Jackson's newly revised cookbook, Who Says You Can't Cook It All, available through his Web site and at Cracker Barrel stores. With his wife, Denise, and friend Anne Nickens, this cookbook is filled with the Jackson family's favorite recipes for entrees, desserts and even Thanksgiving menus. For a fun and festive side dish, try the lime salad:
1 (3 oz.) package of lime-flavored gelatin
45-50 mini marshmallows
1 ½ c. boiling water
1 (3 oz.) package of cream cheese, softened
1 c. of crushed pineapple
1/2 c. pineapple juice
1 c. pecans, chopped
½ c mayonnaise
Dissolve gelatin and marshmallows in boiling water. Blend remaining ingredients, except pecans, with gelatin mixture in blender. Remove mixture from blender and add pecans. Pour into serving dish. Add extra marshmallows to top of mixture. Refrigerate overnight.

You know, the other day I stared at the cookbook & bought other stuff at Cracker Barrel and didn’t buy the cookbook!! I’m so glad I saw this article. My mama(mawmaw) Hardin use to make this all the time and I’ve never found the recipe until now!! So glad I happened upon this; now will make sure I buy the cookbook from CB or the fan club!!!
