Food, Football and Faith Hill

Faith HillFaith Hill still cooks in the iron skillet her mom gave her 25 years ago. How do I know? Because in the new Sunday Night Football Cookbook from NBC, she says so. She also boasts that she's been a football fan since high school and now she plans her Sunday night dinners around the game. This book is packed with 150 recipes contributed by NFL players, alumni, top chefs and the NBC Sports on-air team. The book benefits a great cause -- the food banks of Feeding America. Hill's own recipe for a Greek salad follows in this blog, but she's signed some copies of the book, and you could win one in the Sunday Night Football Cookbook sweepstakes now underway at CMT.com.

Faith Hill's Greek Salad

4 romaine lettuce hearts, leaves torn into bite-size pieces
2 cups crumbled feta cheese
2 Japanese seedless cucumbers, chopped
2 tomatoes, preferably heirloom, chopped
1 green bell pepper, seeded and cut into strips
1 red bell pepper, seeded and cut into strips
1 yellow bell pepper, seeded and cut into strips
1 red onion, sliced
½ cup pitted kalamata olives
½ cup pitted green olives
2/3 cup extra-virgin olive oil
1/3 cup balsamic vinegar
Salt and freshly ground black pepper

The key here is to use good-quality ingredients -- perfectly ripe tomatoes, good feta and olives, and a high-quality cold-pressed olive oil. You can arrange this spectacular-looking salad on the platter up to an hour in advance, then dress it right before serving; just be sure to tear the lettuce rather than cut it with a metal knife so the edges don't turn brown.

Put the lettuce on a large, deep oval serving platter. Arrange the cheese, cucumbers, tomatoes, peppers, onion and olives in rows on top of the lettuce.

In a small bowl, whisk together the oil and vinegar; season with salt and pepper to taste, then drizzle the vinaigrette over the salad. Serve immediately.

    Thanks, For this article I love the fact that Faith still cooks in an iron skillet!! Just like my mamma gave me thats how it is here in the south.. And I bet her mamma seasoned it for her too.

    Thanks for a great article.I have the book and I tried Faith’s coke a cola cake.Everyone loved it.There are a great recipes in there and what a great cause.Faith is such a remarkable young woman with a hugh heart and voice to match

    I think she she stop singing and host a New Faith Hill Cook show. I’m sure it’s hard to make a salad than write country songs, neither of which she can do. I think The Faith Hill-Hazel Smith Cook Show would be great.

    I personally have never ate one of Faith’s salads but I’m sure it’s great. Just like everything else she does!!!!! Also, I LOVE her hair!!!! Quit being so mean!!!! I’m sure the Food Bank could care less about her hair or her writing abilities. Atleast she is taking time to help others. She should be commended and not put down. Honestly the hair comment, WHO CARES!!!!!!

    faith hill is a GREAT singer and a very good cook. I went to one her concerts with her huaband tim mcgraw and she had some homemade food back stage and it was great. and faith is so pretty inside and out. go faith people go and buy faith hill new christmas cd!!!!!

    i bet she cooks good too and i know she sings good personally she is my hero i have tried to sound just like her but she is so damn good……..if i got her autograph i would flip out i dont know what i would do i would just be so happy yep….but i cant wait for her christmas cd im goin to get that

    Green eyes are showing, and what’s the matter with Faith’s hair? I think she looks great! I’m not into cooking no matter WHO’s in the kitchen, but I’m sure she does just fine. I’m with Jen, she’s doing something positive. Live & let live.

    There has always gotta be a few “ninnies” on every page. Job well done! Faith is beautiful inside and out. Love her music. Hope she keeps going as long as the Lord lets her. Her hair looks great as always. Jealous?

    Gosh, I wonder where you get this food from, I never heard of half of it. LOL! I would love to try it. She should get something going like how they sell salads in a bag. This would be good idea. But since I don’t know half of the stuff, I wouldn’t be sure how much it cost. I am going to have to shopping around the grocery stores for these products.
